WELCOME TO PODILIAN REGION!
Podilia ia a region located in the west-central and south-western parts of Ukraine. As any other Ukrainian region it has been developed under influence of many ethnic cultures. And sure it touched upon its cuisine either. In culinar recipes you will find Jewish, Polish, Czech and even Armenian tones.
PODILIAN FORTRESS CUISINE
Since the ancient times Podilia was full of forttresses. On the one side, people who lived in castles had access to all resources. But on the other side, they had to be ready to isolation. If you want to taste such local food, you may choose game (vension, wild boar, hare or pheasant meat) having a gastronomic tour with us. Interesting fact, that every fortress or castle had its own brewery. Vey often beer was used as water, they even coocked soups and borshch with beer instead of water.
RUSTIC PODILIAN CUISINE
Villagers cooked various kind of cereals - salted with horseradish, pork rinds, carrots and sour cream or sweet - with baked milk and fruit. They liked holubtsy (cabbaged rolls) with different stuffings, potatoes with mushrooms or potatoes pancakes with wood garlic. They widely used honey and plant-based food - borshch with nettle, pancakes with dandelions, pies with viburnum or drinks with elderberries etc.
Here we cannot ignore the most famous Ukrainian meal - borshch! Besides traditional borshch cooked with pork and beetroots, podilians cooked fish borshch - for example, borshch with crucian carps. There were popular recipes of borshch with beans, dried fruit - cherries or prunes.
You probably already know hat salo is? Salo in Vinnitsa (Podilian region) is considered to be a local brand. Podilian salo has special tastes because there is a tradition here to feed pigs with cow milk.
